BBQ Burn Ends (Brisket)

Lemon Chess Pie

Things you will need:

​1. Large Mixing Bowl - (stand mixer optional but works well also)

- Stand mixer - Mixer with whisk attachment is perfect

- Hand mix - a whisk or fork works best 

2. Measuring cup/cups

3. Juicer for Lemons (fresh juice is more flavorful, but using store lemon juice is also fine)

4. Zester for Lemons (optional but makes for better flavor)​ [careful with your fingers!]

5. Tin Foil

Ingredients:

2 cups of Sugar

1 tablespoon of Flour

1 tablespoon of fine cornmeal (I use organic mountain cornmeal but yellow cornmeal works also)​

4 Eggs

1/4 cup of Milk

1/4 cup of *melted* unsalted butter 

2 tablespoons of grated lemon rind ( I use 1 or 2 lemons)

1/3 Cup (if possible, fresh) lemon Juice with pulp [pulp creates a nice texture with the fresh lemon flavor] 

9 inch unbaked pie shell

Instructions:

​

[Note: I sometimes Zest/juice the lemons BEFORE starting, so I can just add it to the Bowl without having to pause to prep]

​

[Preheat Temperature = 375 degrees F]

​

[Note: I usually preheat the oven BEFORE I start mixing anything]

​

1. In your Large Mixing Bowl, combine the dry ingredients (Flour, Sugar, and Cornmeal) and combine well, mixing with the whisk or fork.

2. Add the Eggs and combine well.

3. Melt the butter [microwave works but DON'T FORGET TO COVER THE BUTTER or you may have a mess to clean up (no fun cleaning up a butter covered microwave)].

4. Add the milk and melted butter in the Bowl.

5. Add the Lemon Zest (rind) and Lemon Juice in the Bowl.

6.Stir the dry and wet ingredients together until it is blended well.

7. Remove one Pie Crust and Pour the mix in the Bowl into the Pie Crust. 

8. Make sure the Oven is at 375 degrees F.

9. Take stripes of foil and cover the edge of the crust, to prevent burning. (The Foil should cover the crust, but not dip into the pie mix in the Crust if possible)

10. Cook for 30 minutes, then remove the foil from the crust and Cook for another 15 minutes. (Total of 45 minutes - 30 with foil and 15 without foil)

11. Remove from the Oven and let Cool until you are able to place the pie in the refrigerator. 

12. Allow the pie to sit overnight to form.

13. For best consistency, remove from the fridge a few hours prior to serving to allow the pie to warm up. 

14. Cut and ENJOY!

Air Fryer Apple Toast 

Quick and Easy**

 

You will need:

​

1. a knife (to cut the apple up - can also use an apple slicer        and cut smaller slices from there)​

2. Cutting board or similar item​

3. Air Fryer (or you can roast it in the oven if not available)

​

Ingredients:

​

1. Two slices of your favorite sandwich bread

2. One Apple (Honey Crisp or other)

3. Two Tablespoons of Butter ​

4. Cinnamon + Sugar for flavor (a tablespoon of each OR however much you want)

​

Instructions:

1. Cut your apple into small 1/2 inch cubes

2. Spread one tablespoon of butter on each piece of bread

3. Arrange the apple cubes evenly on top of the buttered bread 

4. Sprinkle cinnamon and sugar on top of both slices of bread

5. Air fry directly on the rack for 5 minutes at 375 degrees OR until the apples are sufficiently roasted 

*If you do not have an air fryer, you can put the bread on a sheet pan in the oven at 375 for about 5-10 minutes

Hot Honey Chicken Tenders

Things you will need:

1. Air Fryer

2. Three Bowls 

3. Tongs​

​

Ingredients:

a. Chicken

​

1. One Cup of Corn Flakes

2. One Pound of Chicken Tenderloins (can              multiply recipe for more chicken)

3. Two Tablespoons of Paprika

4. One Tablespoon of Garlic Powder

5. One Tablespoon of Onion Powder

6. Salt and Pepper (measure with your heart)

7. One or Two Eggs - Beaten 

8. a splash of water (just a little bit)

​

b. Hot Honey Sauce

​

1. One-eighth of a cup of Sriracha Sauce 

2. One-eighth of a cup of Soy Sauce

3. One-quarter of a cup of Honey

4. One Tablespoon of Garlic Powder

​

Instructions:

​

1. In the first Bowl, season your chicken

    tenders with the paprika, garlic powder,              onion powder, salt, and pepper.

2. In the second Bowl, Beat your eggs with a          splash of water.

3. In the third Bowl, crush one cup of Corn              Flakes.

4. Coat the seasoned chicken in egg, then              cover in Corn Flakes.

5. Air Fry the chicken tenders at 350 degrees for 12 minutes, flipping halfway through. 

6. While the chicken is cooking, mix sriracha chili sauce, soy sauce, honey, and garlic powder. 

7. Coat the cooked chicken in the hot honey. 

8. Serve immediately and enjoy!!
